Gluten-Free Spoon Project (GFSP)
The Gluten-Free Spoon Project (GFSP) aims to develop and bring to market a new generation of gluten-free, low-sugar edible utensils—such as spoons, forks, and stirrers—as a sustainable alternative to single-use plastic.
The project focuses on transforming food by-products and surplus materials into high-value ingredients, reducing waste and environmental impact as much as possible. Today, Ecopoon’s edible spoons contain gluten, which limits their use by gluten-sensitive and health-conscious consumers. GFSP addresses this challenge by creating recipes that are both gluten-free and as neutral as possible in taste, with a strong effort to significantly reduce sugar content.
The project combines Ecopoon’s industrial expertise in edible, flour-based products with Smores’ artisanal know-how and culinary creativity. This collaboration will result in innovative, scalable, and appealing products designed for everyday use in cafés, events, and food service.
By replacing plastic utensils with tasty, inclusive, and eco-friendly alternatives, GFSP contributes to a more sustainable and circular food system.
